Ferrero Rocher Energy Balls

These feel indulgent yet are a truly nourishing sweet treat packed with fibre, healthy fats, protein and an array of micronutrients for a much-needed energy boost. If you like Ferrero Rocher, then these are for you (without any of the refined sugars or additives!). I’ve made many different flavours of energy balls for corporate events, workshops, friends & family, and these are by far the most popular. They are vegan, gluten-free and would make a perfect homemade foodie gift.

Servings: Approx. 20 balls
Time: 20 minutes


Ingredients

400g soft dates, pitted (medjool dates are best if you can find them)
boiling water to cover
300g blanched hazelnuts, roasted
6 tbsp chia seeds
9 tbsp cacao powder
½ tsp sea salt
1 tsp good quality vanilla extract
whole roasted hazelnuts for the centre
hazelnuts nibs for coating


Method

  1. Roughly chop the dates and soak them in boiling water to soften.

  2. Meanwhile, using a food processor, blitz the hazelnuts until ground.

  3. With the motor running, add the chia seeds, cacao powder, sea salt and vanilla extract.

  4. Drain the dates, then add these in batches to the processor. You may need to stop the motor and scrape down the sides as the mixtures becomes quite sticky.

  5. When everything is fully combined, scrape the mixture into a bowl and assemble some whole hazelnuts and hazelnut nibs for the rolling.

  6. Using damp hands, roll the mixture into small balls, push a whole hazelnuts into the centre then coat in the nibs.

  7. Store in the fridge for up to 2 weeks. They also freeze really well in an airtight container for a quick grab ‘n’ go snack.
